We had a very productive day at the garden. The zucchini plants are popping out a huge zucchini every other day. The basil is knee high. The tomatoes are productive, though still green.
We nipped off our basil this afternoon and ended up with a beautiful armful. On the way back from the garden we passed by a few blackberry bushes loaded down with ripe berries. So we ended up with a few pints of berries – definitely something to keep going back for in the next few months!
With our freshly picked basil and blackberries, I made us some summer cocktails.
I muddled the basil with some lemon syrup though simple syrup and a squeeze of lemon would substitute well.
Blackberry Basil Summer Cocktail
- a handful of fresh basil
- a handful of blackberries
- 2 T. lemonade syrup (or half a lemon and 2 T. of simple syrup)
- 1-2 oz of rum
- 1/2 can of seltzer water
Muddle the basil in the lemon syrup until bruised. Add blackberries and muddle gently. Add ice and pour rum over top. Give it a stir. Top off with seltzer water. Give it another stir, and garnish with a sprig of fresh basil
