This little weekend morning gem is the reason why leftover potatoes are a thing of beauty. We mash (or sometimes grate) baked potatoes and flatten them into a cast iron pan. For the best weekend pans there is also a tin of corned beef on standby for corned beef hash. In this batch I think we did a bit of onion, all topped with a fried egg and some sharp cheese. Admittedly, it needs some crumbled bacon… mmm….
