    a neat trick I am doing lately for veg that are not going to get used soon enough– cut them up and freeze them, then use them in stock later. This only works if you do it BEFORE they get slippery, and it only works for things you’d normally make into a stock. Coriander and mushrooms, for example, would be fine. But again, you have to do it before they go. It’s tricky but do-able. Sometimes, if we come home from our farm pickup and I know we’ll have a hard time going through the bounty (a busy week ahead, travelling, etc), I will just make stock out of some of it straight away. Or make soup and freeze that.
