The other day I wanted to make an antipasto platter, which I haven’t put together before, so it was a bit of a hack job. I suppose salty foods with bread would be a better description, but it was fairly simple and a great meal to stuff into with a few friends.
I went to a cheese deli around the corner (The Cheesarium, I think it’s called?) and helped myself to the olive bar, and got an English Applewood Cheddar, brie, and an Italian cheese – I forget what it’s called, but it’s sharp, soft and begins with the letter P. Also on the table is tomato bruschetta with kalamata olives, proscuitto with cantaloupe, grapes, fresh multi-grain bread, Ryvita dark rye crackers, balsamic vinegar and olive oil, and some red wine.
It took some time to put it altogether, but it was still relatively fast and easy to prepare ahead of time and pull out of the fridge. I forget what else you can put into antipasto platters, but I get the impression that it’s mainly getting good ingredients and making it look pretty. If anyone has any ideas, I’ll definitely try them next time.
